Just DST some help please

Ok picked up DST jet tunercat program. I didn't have a lot of options since have 96 obd2 and didn't want to go to obd1.
So currently using hypertech programmer for fan temps and gear correction.
I have maf translator for injector correction. So will of course take out hypertech program and go back to stock.
So now trying for starters to set the car for the 3.42s instead of stock 2.73s. Do you just set it in that one screen where it has tire sizes. Thought there was another place where they had the gear ratio as final drive ratio or something?
Also is there a simple place to change the injector flow rate or do I have to change it all over the place in various screens. I am used to programming my dsm cars and that program is kindergarten compared to this tunercat /DST. the on disc instructions dont' seem to great and have been going over them a bit. The forums are also not that great it seems.
I have a good grasp of basic tuning and have been scanning my lt1 and ls1 cars lots in the past but been tuning them only with maf translator,scanmaster and autotap.
I also would like to set therm to 160 don't even see that option or do you just set fan temp ranges and not set it for specific therm?
And am getting super annoying phantom knock that pretty sure is due to exhaust leak or lifters.I would like just for a bit to turn off the knock retard totally. I realize have to be careful doing this but running premium 92 can't see any big danger .Of course won't lean out the car or touch the timing until get the knock thing firgured out and fixed. I realize you should have working knock to tune ,at least its helpful to have it to know when you are going too lean or too much timing.

tuner cat tables,constants etc. change with the pcm and O\S. after you learn one somewhat you tune something differnt and it is that-differnt.
i do not have a LT1 obd2 file to look at. w\dst you can look at tuner cat (what i have) but i can not look at a dst .cal file. go to cal tools for tire\speedo changes. injectors change def file to def file on how the tables work.
i have had this tuner cat six months, thought i might have a pretty good handle on it in that time. turns out i might have a grasp on what i yet need to learn.
