Angry Overheating

I have a 1981 Z28 with a 454 and she overheats like crazy, after about 20 minutes or so it gets upto 220/240 and stays there. Doesnt overheat to the point where it blows steam but acts up and i have to pull over. I have a 3 core rad in it(good condition) with good flow, new thermostat(165), head gasket isnt gone, water pump is working and I have an electric fan (2 12" fans), none of the hoses are leaking. Any more suggestions?

The timing is dead on, the thermostat has been removed as of today and the fans are attached to the rad, im sure they are installed right cuz a performance shop installed them.
