wondering what type of material might be used in the two pictures here as well as how it was done. if it was just wrapped around a thin board or otherwise....

Looks like Vinyl to me... and yes, just basically glue it to and srap it around a thin board... or over a thick board...
ANd if you want those inlays, just cut them outta some foam, and glue them down 1st.
