HU will be awesome, I had a lot of Pioneers before, never let me down and sounded great. They are second in my opinion after Eclipse.
As for the amp, get a JL 300/4 or 450/4, you will be happier. Can't say anything about Pioneer subs, but if I am not mistaken, this year SPL champion had them.
P.S. Full-Range Class D is not what you want...

Anyways, the P880PRS is the poor man's SQ head unit. It will do 3 way active with the built in crossovers, it has good EQing capability, DTA etc etc. Everything you need.
It looks really classy when set to all white. Not at all flashy. Feels like a million dollars. Easily the best deck in it's price range. I would take it over any Alpine, Pansonic, Kenwood or Clarion. I've sold, installed and worked with every major HU brand out there, so this is from direct experience.
I would say though that Pioneer subs and amps leave a lot to be desired. There is a lot out there that will trounce their subs and amps for a lot less money.
Also, I didn't see any speakers in your list. Why would you want to run OEM craptacular speakers with subs? The system will be very out of balance.

However, it is much harder, by the nature of it, to design high quality full-range class-D PWM-outputs circuit. That's why cheaper full-range class D will be almost everytime behind same-priced A/B's. With introduction of even more advanced (low Rds, high speed) switches then MOSFET's, soon all amps will be class-D though

you don't want that amp... get a mono amp for your sub. That amp would be ok for the rest of the car speakers.
Pioneer is ok but I like panasonic better. A friend recomended it to me and I don't regret buying it one bit! The head unit I have has been awsome for the past 5 years I have owned it. It never has skipped once and plays MP3/WMA CDs. I have two 12" bazooka subs pushed with a california 600W amp (not in my camaro though)

You don't have to run a mono amp for your sub.
Panasonic is pretty solid, but they're notorious for a fairly high noise floor from my experience. Panasonic doesn't make anything that can compete with the P880PRS in terms of flexibility.
If you want 'better' than the P880PRS, you would have to step up to a DRZ-9255 or something similar.
The only problem with the P880, is they have an issue with the RCA's. Easy fix, basically you just run a seperate ground to the RCA grounds and you'll get rid of any ground loop you had.
And yeah, full range class D seems like the new wave. Alpine's PDX amps are really nice.
