Why no 2doors?
I think airbags killed the coupe market. It's not a lot of fun to put a child seat in the back of a coupe (especially a smaller one) and you can't put one in the front these days.
I still prefer two doors, though. A family only needs one practical car. To have another would be pointlessly redundant.

In some cars, atleast my friends truck (extended cab), you can turn off the passenger side airbag. I think its mainly the fact that people want more rooms and an easier way of accesing the extra room. Who would honestly say its easy to get in the back of a Camaro, especially in tight places where the door is so long it can barely open up?
I think in the past there use to be a "HUGE" visual difference between coupe and sedans. I think that recently alot of sedans are looking more sporty and have more powerful engines and better 0-60 times that have made the differences between sedan and coupe less obvious. Considering that most car makers dont make an entirely unique and seperate coupe anymore since most of the new coupes share platforms, engine options, interior, and etc. Sometime the only visual difference is that the coupe is missing 2 doors and is more expensive then the more roomy sedan version.
In the past sedans had a stigma of an old mans car but i dont think that stigma is as bad with the kids today as it was in the past. The success of modified Civics, Accords, Neons, Imprezas, Lancers, Focus and etc show that while kids most likely prefer the looks of a coupe but they are willing to overlook that shortcoming as long as the sedan still performs like a coupe.
Note: Again I must stress that sedans are usally cheaper then coupes and the insurance is lower on them as well.

The coupe market collasped around 1998. The only coupe that didn't drop in sales was Mustang, which ended up selling more than all other coupes sold in the US combined after the F-bodies were pulled.
With people reproducing at younger and younger ages these days, they are missing out on the time in their life when they dont need a practical vehilce. So they're stuck between wanting a performance vehicle and needing a practical vehicle. Hence, the 4d performance sedan.
It's sad but true. The four doors are just too practical for people these days. I have to wonder how the RX8 Mazda will do with its rear pop out doors like the Saturn versus four conventional doors.
I had the "suicide doors" on my extended cab F-150 and to tell you the truth, I loved em. It was actually much less of a pain in the *** and it cut down on cab length. I think if these were incorparated into some NICE cars, wed be good to go.
