Very informative link Steve.

I don't know much about suspension, but how do the different spring rates affect handling and ride quality?

Here is what I've found.

I've used 3 different sets of springs. I started with stock springs (292#), took those out and went with Eibach Sportline 's (360#) and now have Eibach 500# springs with coilovers. And you know what, the 500# springs ride as good as the stock ones.... and the reason?? Good shocks. Good shocks are an ABSOLUTE must for ANY spring. My car actually drives and feels better now than it did stock. Much more control, much quicker response, and much less bouncing around.

Obviously, handling improved, partly because the spring reduced the cars roll rate (and dive rate) but partly because of the shocks. Springs and shocks go hand in hand, you shouldn't do one without the other. If you go with a stiffer spring, you MUST use a good quality shock, the stock shocks are barely enough for 292# springs.
