Help? Want to do custom interior work...

I have a 1995 Z28. Exterior is red with the black 2 tone (mirrors and roof). I painted the 2 false z28 hood scoops black which looks real nice, and I'd like to continue this theme to the interior. I have red and black seat covers and floor mats, and I'm toying with the idea of painting as much of the dash/doors (interior) black as I can, and then a few red accents. My current project I'm looking at is the door. I have popped the interior panel off already and am now wondering how to remove the cloth pieces. I'd like to reupholster the cloth parts in red, and meanwhile paint the rest of the door black.

Does anyone know how to remove, upholster, and reattach these cloth pieces?

Also, any reccomendations on the black paint scheme? I have most of the dash removed already as I am replacing the gauge faces, so the idea was more of a "why not?" But there are some pieces I don't have access to and therefore might not be able to paint. Resulting an an odd black/charcoal gray combination. Thoughts?
