Correct me if I'm wrong...

When you get your car repainted, any rock chips that were just paint deep should be gone after the paint work because they will go away when it's sanded?

If the paint job is done the correct way, yes. They should sand it down to the metal/plastic/fiberglass. That should take care of most of the chip, unless it put a dent in the metal/plastic/fiberglass.
