SBC, cam, stall, rear gears, nitrous oxide

The SBC is a 383 with forged crank rods pistons, 215 cc runner 2.05'' 1.60'' valve heads
The cam is a flat tap hydraulic 234*/244* .540''/.560'' with 1.65 rockers.
I was thinking about getting a 2800/3200 stall converter w/ lock up(its for a th-700) but will that be enough with 3.73 gears?
I have a 10 bolt and an eaton posi waiting to go in and all I need to do is pick up the gears.
The power band on that cam would start about 3000 to 3200 and pull hard out to 6700.
And I was going to spary 150-200 shot for the 1/4 mile.
What would be the best converter to go with that engine and rear end?
How much stall should I use?
What should I get for an after market flex plate?
The lighter 153 tooth (that's whats on there now)?
Or the heavier 168 tooth for better 0-60ft times?
