You can pull the heads with studs seated and the motor in the car. I did it with the a/c box still in the engine bay. As for gaskets I run the cometics. I put the heads on a belt sander before installing them. You shouldnt be able to feel any groves with your finger nail on the head or deck. With this said they seal nice! I have been running them with no problems.
