Normal Temp for a 350 TPI ?
nah dude LT1 motors run cooler then TPI's...
210 is normal for TPI cars...
and putting a lower temp stat in there will actually hurt performance..
its all programed in to the PROM...the coolant temp sensor sends signal to the ecm of when to open the thermostat..and if thet temp of 195 is reached after the stat is opend rather then before the ecm will richen up the mixture because it still thinks the car isnt up to operating temperture...
in TPI motors 210 degress is about perfect...the inlet air temp is what you want as cool as possible...
theres a reson the fans wont come on untill 225...
and heat IN THE motor will help create horsepower due to a more complete combustion process....the incoming air is what you want to be cool...
a hot motor is good...hot air isnt

I have my 305TPI running at 160*.
Runs pretty strong for a bone stock car with a 160 thermostat.
Gets over 25mpg too.
The stock operating temp for an unmodded thirdgen car is 220*, that is when the primary fan comes on. It should normally stay at that temp unless you are constantly moving, like on the highway then it will be lower.

I assume your's ia 91; Programmable Coolant Valve?
An engine that can be programmed to control the flow of coolant doesn't need a thermostat, it would operate a valve to control the coolant flow, and I don't think there's a third gen out there that doesn't use a thermostat to control flow. The ECM can be programmed to operate the fans at whatever temperature you want, bu the STAT will only open at it's calibrated temperature setting. Car manufacturers only use what is cost, or emmisions effect (emmisions are less at higher temps ie..210-220°F.)
These temps are not good for your engine, mileage, or it's performance.
Do you have a part number for the programmable coolant valve, and the ECM that operates it, I looked at a dif file for a 91 using LT1 EDIT, and there's no parameter for setting the cooltant valve, or thermostat operating temperatures, only the fans are programmable.

Thank Raul.Like I was trying to say for everyday driving if you fell better about letting your run 210-220 that's fine.But if you want to go fast at the track 210 is not going to be as fast as say 170-180.Trust me I have owned a lot of tpi car's the same as lt1's they like to run with there head in the fridge and there feet in the oven.Please don't confuse oil temp to coolant temp.
