At Advanced Auto for my 01 Z28, they tell me they have two different transmission filters for my car, one being for a deep pan and the other for a shallow pan - they say they're two completely different filters... Which one is mine?

All F-Bodies came with shallow pans. The deep pans are for truck/van applications. The F-Body doesn't have enough ground clearance for the deep pan. Your parts counter guy should've been able to look that up, by the vehicle.

He did, and it displayed that it used two pans - and it wasn't just that store either... I had it looked up at a completely different one in another city just to make sure and they also displayed it used two different pans.. but I was thinking shallow too, just didn't want to pull it all apart to find I was wrong...
