Like metal polish them? You would have to get some 303 Aerospace stuff to remove all the clearcoat and all the paint. Then you could go about polishing them. By hand it will take a while, but they would look pretty sweet.
And if you're talking about polishing them with car polish, then sure, you can do that. I usually take mine off my car, clean them up really good with Eagle1 A2Z wheel cleaner, polish them, and wax them.
Keeps the brake dust off pretty well.

It's an awful lot of work, but looks nice when done well.
Remember that polished (bare) wheels will also require a lot of maintenance to keep their appearance, unless you get them clearcoated after you polish them.

i attempted this on my stock 95 wheels and it is NOT WORTH IT!! it takes SOOO much time! i thought that it wouldn't take very long, but i only worked on one, and it took about 10 hours to get HALF of it done. i used a pneumatic sander, palm sander, by hand, and it just took forever. there wouldnt have been a problem, but when you get everything stripped (easy part) you have to sand down the "pits". the pits are from the powdercoating, and are nearly impossible to get out. i ended up just polishing the lip and painting the rest of the wheel black. <that turned out pretty good and was worth it. i do have to admit though, the half of the wheel that i did polish looked pretty sweet and would have been worth it if it took 1/4 of the time that it did.
