The first step in Zaino Instructions say to clay bar the wash. My car is filty with dust and water spots. should i wash before i clay bar.

Yes, wash the car with Dawn dish soap before and after the claybar process.

Do I have to wash the car after I clay it? Or can i just clay it and start polishing a different day. Also is using Joy soap the same as Dawn?

Joy does not work as well as Dawn, not the same. You will have soap residue on the paint after claying the entire car that will need to be washed off.
