Unhappy overheating after new thermostat and flush??? help if you can plz

Replace Thermostat. Check. Put everything back together and now time to flush the system. Check and Check. Now heres where i run into a new problem. When i went to fill the radiator back up it takes 1 1/2 gallons of any make any moder prestone and wont take a drop more. I started the car and let the thermostat open and then turn the car off to cool down. Finally cooled down and went to check the level and the resevoir was empty and the radiator was full to the brim so i dump a little into the resevoir to the COOL line and decide to take it for a drive. I get about 2 mile away from my house i i notice that its heating up more so than it ever has so i turn the heater on to try to despirse so of the heat. Turn the heater on and the air coming out is cold!!! notice it heating further and further so i turn around to head back home. I make a u-turn and notice that while the car is turning the air coming into the cabin is ultra hot and the temp gauge drops rapidly. Once back on the straight away though same symptoms, cold air coming through the vents and temp gauge skyrocketing. PLZ HELP!! What do i do now?

Did you open the bleeders and let the air out? Then run it took the thermostat open to let it burp?
