stock LT1 pcm/maf good for my power?

Will I run into problems with my stock pcm and maf(1995 trans am) with my power goals? I plan to run a 383 with a T76GTS turbo or D1SC procharger. Probably in the 550-800 rwhp range. I know that's broad, but I don't know how much I'll want to turn the boost up until I get it all installed. I just need to know if my stock pcm(don't know if its OBD1 or OBDII) and MAF will give me problems.

Since you have a 1995 - your PCM is an OBD 1. This is a good thing for you because many consider the OBD 1's to be easier and less tempremental to tune. The software is also much cheaper for them. This PCM should work fine for your goals - the only limit to the stock PCM is that they don't work once you get much past 7,000 RPM's. But if you stay around or below that, you will be fine.

Regarding the MAF sensor - some people have had issues with these - but there is something called a Mass Airflow seignal messager that can be purchased from Vortech or ATI to trick the MAF into thinking different values are going into it. You can also delete the MAF from the PCM all together and run a speed density tune - but you may not want to do this if most of your driving is on the street as it will make it more difficult during part-throttle times.

P.S. why is it more difficult to drive part-throttle with a speed density tune? What does "more difficult" mean?

No - the mass air messager will not make part throttle driving any different. It will act the same way it does with the mass air on.

By "more difficult" - I mean that the engine will not run quite as smooth and your throttle responce will not be quite as good at part throttle with a speed density tune as compared with a mass airflow tune.
-Speed density tunes work great for full throttle driving and racing - but they can be a little tempromental trying to drive around the streets. So its a give and take thing deciding which way you want to go....

Oure car run perfect widh stock MAF and MAP last year, no need for MAF translator, only thing extra was a imedancs converter box to the injectors.
