Valve spring shims???

How close does the install height between all the valve springs need to be? I see that typical shim kits contain .015, .030, and .060 thick shims. So is it safe to assume that as long as the install height of all the springs is within .015 of each other you are good to go?

Yeah .015 if that is as close as you can get them with the valve job that has been shot.

If I am going to need to sink exhaust valves more than the intakes for some reason, I will do it in .015" incriments so that they pressures will be matched exactly when done shimming.

So on a factory LT1 valve job are all the valves recessed in the head the same amount dead nuts on? Do they use shims any smaller than .015 at the factory on an LT1 head?

Factory heads don't come with shims, they have a single locator. Brand new factory heads have valve heights shot withen .003" of each other most of the time. So basically it comes down to you need to measure where you are at and shim accordingly.
