Start with the fuel rails and vacumm lines, intake elbow, throttle bracket, ASR if you have it, alternator bracket, take off the TB, and EGR connections in back if you have one. It really isnt all that hard. Just remember to label everything and keep things organized. There are some bolts that are different than others (studs) so you need to keep track of where these go.

When its ready to come off youll have to pry it off so becareful you ding or force anything since it is aluminum....then just put everything back the way it came off.:)

Sounds good but if you just rattle the intake a little (rather, gently shake) it'll pop right off. Or maybe I'm incorrectly assuming that because that's how mine came off and I might just be a lucky bastard :-). Good luck! That's a lot of work to just have a painted manifold. You're a better man than I!
