When you took off your old Elbow you must have unplugged the IAT(not IAC, IAC is in the Throttle body) sensor. You gotta plug it back in.

I dont think that he understands that you have to plug the IAC sensor back in
Maybe I'm an idiot and am wrong, but my understanding about the elbows is:
There is a spot for the IAT - Intake Air Temperature (not IAC) sensor on the outside (read: long side) of the bend in the elbow.
On the elbows for cars with the vented opti, there is also a small connector (hole like for a small vacuum tube) for the vented opti.
The IAC is the Idle Air Control motor and it physically mounts to the bottom of the front of the throttle body, and not in the elbow.
So if your elbow has the opening for the vented opti, then I'd hit Autozone or some other similar parts store looking for a vacuum tube in-line connector and a vacuum cap. Put one end of the in-line connector into the small hold on the elbow and the cap on the other end of it and you should be fine.

I would call up ls1speed then because they are sending out the wrong elbows.
