If your engine died then it may be that it is not kicking into the A/C mode. In other words when the clutch normally engages the engine would idle up and fans would come on. If the engine dies when you jump the clutch one of two things could be wrong. 1) you could have a bad compressor that is putting too much load on the engine at idle. 2) Your PCM is not kicking the idle up when the clutch engages. A better way to diagnose the clutch is to allow it to work normally. You have already determined that the actual clutch mechanism works.
There is a small sensor located over the passenger side strut tower. This is the A/C line pressure switch. First off you need to jump this switch to see if the clutch kicks on and idle goes up. You will see 3 terminals, it will look like an upside down triangle bridge the two at the base. Don't worry bridging the wrong ones will not set off the atomic bomb, in fact nothing at all will happen. At this time you should here the engine idle up and the clutch should engage.
If nothing happens then it could be that there is a fault in the system and the PCM has disabled all A/C functions. Just simply reset the PCM by unplugging the battery or pulling the pcm fuses for a few seconds and then trying the process again.
If the clutch engages and the engine dies again then you have a worn out compressor with bad bearings. If the system seems to come on correctly then you could 1) have a bad pressure switch or 2) have a leak or low refrigerant.
