I see 179º on mine most of the time, but much of that is fan temps and a cool climate for me.

It takes 10min. to get the needle to even move in the morning, and I live in Florida(50degrees in the morning), it takes about 20 minutes at a light to get to 180, so I'm going back to a 180degree next week.

With a 160 stat my engine temp runs 178-180 according to datamaster. I well hit the fan temps (182&188) in stop and go traffic, in hot weather. Warmup in about three to four minutes and full temp in five to six miles. Great heater output.
