Engine Running Temperature

I just purchased a brand new z28. I was wondering what the stock themostat was set at. I cant find it in the manual. Also, my car runs at almost the 210, the needle is infront of the 210 mark, is that normal? my v6 stay around 185 or so.

210 I believe is normal, mine rests there about 5 minutes into my daily commute.

The stock thermostat is 195 degrees, and stock settings turn the fans on at 215 degrees.
Your car is running at a normal temperature.
If you want it to run cooler, I would suggest a 160° thermostat and either a SLP control switch or a HPP3.
I have a 160° thermo & the SLP switch myself and it works fine. Only time I ever use the switch is at the dragstrip (and when I acidentally kick it with my foot - time to move the switch! )
