Post Carb size for a 388 stroker

Need help on deciding to go with a 750 demon carb or 850 on my friends 388 stroker CHEVY SBC. Also what is the purpose of the Power Valve?

Depends on what you are going to be using it for... if you want a nice street machine go with a 750, if you want to drag it go with 850.

In simple terms, power valves are designed to open when the engine is under a load (such as when accelerating) and modify the economical air fuel mixture from approximately 14.6 to 1, down to a richer, power mixture of about 12.6 to 1. The needs of the engine, regardless of the number of carbs is pretty close to those numbers.
