I thought they were all just sleeves more or less. A braided metal hose wouldn't work for holding water or air. It'd always manage to get out.

I've gotten all of my stuff from here:

http://www.gottashow.com/index.php

I haven't ever been able to find any radiator hoses that didn't just have the "fake" sleeving on them, but I didn't look very hard because I opted for stainless coolflex hoses instead. Switching all these hoses out with the stock components can get kind've tricky though because some hoses are designed to be used with AN style compression fittings only and won't work as a "clamp on" hose like the stock ones are. Teflon lined braided stainless hoses are an example of this.

This could just be a myth also, but when I was shopping around for braided hose, I was told by a few vendors that it's not a good idea to mix and match hose from one manufacturer with AN fittings from another. (I.E.-Earl's hose with Aeroquip fittings.) The story I got was that these manufacturers vary the I.D and O.D. measurements of their stuff just slightly so that if you try and use it in combination with a part from one of their competitors it won't function as it should. Could all just be a bunch've BS but as expensive as this stuff is, I wasn't willing to chance it.
