When I put dumped exhaust on my car I removed all of the heat shields from the rear of the car, but my exhaust is just too loud so I want to go back to full exhaust. Will it hurt anything if I don't have the heat shields on there (specifically the one under the gas tank)?

Shouldn't hurt anything. Make sure no wires or anything are close to to the exhaust.

I don't know if the one by the gas tank is necessary, but I was under the car a few days ago in my quest for some weight reduction and decided that one (heat shield) would stay on. I don't know if it dangerous or not to take it off, but heating the fuel up can't be good for performance, can it?

Actually..... high temp and high psi fuel have been shown to increase economy and in some cases performance.... but these were special setups.
No I would not want to heat my gas tank, but as long as they are not rubbing it should not get it hot enough to burn.

Thanks for the input, I'm still not sure, I might try to get some from a junk yard or something.

I doubt GM added them just for fun :)
