How common is it to break a bolt in the heads when putting headers on a lt1?

common to break the manifold bolts

if the frontmost or rearmost bolt, don't sweat it, the headers don't use those holes

Spray down the old manifold bolts with PB Blaster before disassembly and let them sit for awhile and you should be okay.
