Whats the best thing to paint the dash with?

Go to a local autobody supply store, they have actual padded dash paint

Yeah, there's special stuff to do the dash and plastic door panels with. It's a special vinyl/plastic paint system and it actually works quite well- doesn't peel or flake off if done correctly.
