i have a stock 350 motor, with long tube headers with 3" collectors, true dual, is it ok to run 3" all the way or whould i get 2.5"???

Now you say it is a stock 350. I'm getting confused. If your engine really has 381 hp then 2.5in pipes are big enough. If you have a stock 350 you don't want to go any bigger than 2.5in or you'll have less power and more fuel consumption. You also said you have dual 3in e-cutouts. How could you have 3in cutouts on 2.5in pipe-did you put a reducer on either side of the cutout? It is a tight fit and you have to be careful with the alignment so that they don't vibrate against the body when you drive. That is an annoying sound. I have my pipes 2.5 just like that and they sometimes hit the body. By having them like this they are sort of hidden from view and just shows up under the rear bumper. Much like the original look.
